Was ein Schmuddel Wetter, da braucht es eine extra Portion an comfort food. Und das geht natürlich nur mit einer Suppe.
Um genauer gesagt einer Enchilada Suppe. Ich muss jetzt aber mal gestehen, eigentlich kein besonders großer Fan von Suppen zu sein. Höchstwahrscheinlich habe ich mich irgendwann im Laufe des letzten Jahres komplett 'satt' gegessen und dachte eigentlich ich werde 2019 ohne Suppe auskommen.
Naja, es ist immer noch Januar und ich muss sagen diese Enchilada Suppe hat alles was ich absolut liebe. Frisches Gemüse, eine gewisse Schärfe, ein bisschen Zimt und der heimliche Star Canihua.
Canihua, für alle die noch nie etwas davon gehört haben(ich muss gestehen, ich ebenfalls!), wird auch als Baby Quinoa benannt. Ja diese kleinen Samen sind wie die mittlerweile bekannten Quinoa Sorten komplett glutenfrei, laktosefrei und sojafrei. Auch vom Geschmack her ähneln sie ihnen auch sehr, schön nussig, leicht süß würde ich auch schon sagen.
Perfekt also für diese Enchilada Suppe!
Wer diese mini Quinoa Sorte nicht daheim hat der kann natürlich auch die normalen weiße/rote oder schwarze Quinoa verwenden. Sollte genauso hervorragend schmecken! 
Ach und am besten macht sie sich auch noch ein, zwei Tage im Kühlschrank, als meal prep oder vielleicht auch im Gefrierschrank um für die nächsten Wochen immer ein leckeres Gericht in wenigen Minuten bereit zu haben!​​​​​​​

But I must confess now, I'm not really a big fan of soups. Most likely, at some point during the last year, I ate myself completely 'fed' and actually thought I would get by in 2019 without soup. 
Well, it's still January and I have to say this Enchilada soup has everything I absolutely love. Fresh vegetables, a certain spiciness, a bit of cinnamon and the secret Star Canihua. 
Canihua, for those who have never heard of it (I must confess, me too!), Is also known as Baby Quinoa. Yes, these little seeds are like the now known quinoa varieties completely gluten free, lactose free and soy free. 
They are also very similar to the taste, nice nutty, slightly sweet, I would say.Perfect for this enchilada soup! 
Those who do not have this mini quinoa variety at home can of course also use the normal white / red or black quinoa. Should taste just as excellent! 
Oh, and best of all, she's also going to spend a couple of days in the fridge, as a meal prep or maybe even in the freezer to have a tasty meal ready for the next few weeks in just a few minutes!
